SESAME CRUSTED SALMON STEAK

Ingerdients
- 900g of Scottish red-label salmon
- 2 tablespoons of sesame seed
- 2 tablespoons of poppy seeds
- 2 tablespoons of green anise seeds
- 2 egg yolks
- Olive oil to taste
- Table salt and white pepper
Preparation
- Buy deboned and skinless salmon fillet from your fishmonger.
- Cut into regular-sized pieces.
- Mix sesame seeds, poppy seeds, green anise, salt and pepper together in a dish.
- Prepare the batter, by mixing yolks with 2 tablespoons of olive oil, 1 tablespoon of water and season, brush only one side with this mixture and coat with the seeds.
- Cook them either on the griddle or on the grill, only on the spice-crusted side, which is called unilateral cooking, and serve with a slice of lemon or a bit of orange butter.
